I'm really hoping a food-blog will force me to cook more often. Mission: Freakin' Accomplished. At least, for today.


Lunchy munchies! Spicy Tuna Melt--a spicy-sweet variation on a classic sandwich.

Lunch for me is usually a found-it-in-the-fridge event--leftovers paired with raiding the pantry or whatever veggies we happen to have laying around the house. Initially, I was craving a quesadilla. Last week I'd made them with sweet potato and chicken and they were amaaazzzing. But as luck would have it, no tortillas. So I decided to take a bit of a gamble and dress up a tuna melt.

I ended up throwing canned tuna mixed with mayonnaise, sweet potato, tomato, lots of cayenne pepper (mmmspicy!), and a little of that salt an' peppa'. The super fresh-tasting Pepperidge Farm homestyle bread was definitely a plus. I'd have preferred some sharp cheddar, but the almighty Fridge only had a shredded mix--What's a girl to do?! Shut the fuck up and eat her sandwich, that's what.


What its like: The bread is the first thing to notice: crunchy on the outside but still soft and warm towards the center. The tuna is carried by a salty-sweet and creamy combination that turns into a peppery heat from the cayenne and black pepper. The creamyness of the tuna is enhanced by the cheese and avocado atop the melt. Post nom-noms, the cayenne heat and that nutty/sweet/smooth/mellow taste that only avocado can leave behind hang on the tongue.

Verdict: Not the most beautiful of meals, but would nom-nom again. Repeatedly.
Skill-level: Pretty low.
Time: Less than 10 minutes.
